Tomatillo Avocado Salsa

A smooth salsa that Amanda Escamilla and her family enjoy often with corn tortilla chips, it's also one of her favorite salsas to have with tamales. Creamy avocado, 2 whole jalapeños!, sweet and tangy onions, fresh lime juice and vibrant cilantro are flavors that complement the spices and masa of tamales.
 
 

INGREDIENTS

  • 6 medium sized tomatillos

  • 2 green jalapeños

  • handful of cilantro, stems removed

  • juice of 1 lime

  • 1 small Spanish onion, chopped

  • pinch of salt

  • pinch of pepper

  • 1 ripe avocado

Special Equipment

  • citrus juicer

  • blender

HOW-TO

  1. Peel and discard husks from the tomatillos

  2. Place tomatillos and jalapeños in a saucepan, add enough water to cover. Bring to a boil, then remove from heat and let steep until ingredients are soft, about 30 minutes

  3. Reserve the flavored water from the pot and set aside

  4. Place softened ingredients in a blender

  5. To the blender add cilantro, lime juice, onions, salt and pepper

  6. Blend until liquefied, adding reserved cooking water to aid in the blending process

  7. Scoop out meat from avocado and add to the blender at the end.  Mix until all ingredients are puréed

  8. Serve with chips, tacos or Amanda's South Texas Pork Tamales
